Asparagus is a spring plant that grows wild in the Mediterranean, on the slopes of the Šavrinsko gričevje hills. It can be found in the area extending from the Karst towards the sea, most frequently along footpaths, trails, fields and forests. Asparagus is a mild diuretic; it eases digestion, helps with liver functions, stimulates the growth of connective tissue and increases the appetite. Asparagus is prepared in different ways, most often as “fritaja” with eggs, or with additions such as cured salami, karst ham or sausages. It can be cooked for salads, gratinated and used in minestras or in risottos.
